If you’ve hung around Pellets and Pits for any amount of time, you already know the wife and I take game day pretty seriously. And nothing kicks off a party faster than pulling a bubbling, cheesy dip straight off the pellet grill. There’s just something that happens when wood-fired smoke meets rich cream cheese, melty cheddar, and bold spices – it turns a good dip into an absolutely unforgettable one.

I’ve always said the smoker makes everything better, and these recipes are proof of that. From a classic 3-ingredient sausage Rotel dip that my Aunt Caroline made famous, to a smoked pickle dip that takes a viral trend and completely blows it out of the water, every single recipe on this list has been tested and approved right here in our backyard.

Whether you’re feeding a crowd on Sunday or just looking for a reason to fire up the pit, these smoked dips are some of the best things we’ve ever made. Grab a bag of chips and let’s get into it!

1. Smoked Sausage Cream Cheese Rotel Dip

My Aunt Caroline has been bringing this classic 3-ingredient dip to family parties for the last decade, and I decided to up the flavors just a bit by throwing it on the smoker. Sausage, cream cheese, and a can of Rotel – that’s all it takes to make a smoky, creamy, slightly spicy dip that disappears fast. It’s the perfect low-effort recipe to have going while you’re prepping everything else.

2. Smoked Jalapeno Popper Dip

If jalapeño poppers and a warm smoked cream cheese dip had a baby, this would be it. From the first bite, the wife and I were completely hooked – it’s easily one of the top five best smoker dips we’ve ever made. Smoking the jalapeños and cream cheese first adds a layer of flavor you just can’t replicate any other way.

3. Smoked Street Corn Dip with Cream Cheese

We spotted an elotes-style street corn dip at the grocery store and figured we could take that idea and run with it – and run with it we did. Starting with griddle corn and bacon and finishing it in the smoker, this dip delivers every single one of those bold, authentic street corn flavors. We brought a big batch to a family get-together and it was gone before halftime.

4. Smoked Brisket Queso

Smoked Brisket Queso

Here’s my beef with most queso recipes – they taste more like a bland cream sauce than an actual cheesy Mexican dip. This version fixes all of that with chopped leftover smoked brisket, melty white American cheese, fresh pico de gallo, and a smoky kick from smoked jalapeños and chipotle. If you’ve got vacuum-sealed brisket sitting in your freezer, this is exactly what you should be doing with it.

5. Smoked Crab Dip

Smoked Crab Dip

We use two types of crab in this one — real claw crabmeat and imitation crab — to keep the costs down without sacrificing any flavor. Mixed with cream cheese, Monterrey Jack, and a bit of Cajun seasoning, then smoked on the pellet grill until bubbly and golden, this dip is a serious party starter. Throw some crostini on the grill alongside it and you’ve got a complete appetizer setup.

6. Smoked Pickle Dip

Smoked Pickle Dip

By now you’ve probably seen the viral Grillo’s pickle dip all over your feed — cold, creamy, loaded with bacon and cheese. This recipe takes that idea and makes it better by serving it warm, bubbly, and straight out of a cast iron skillet with a kiss of smoke from the pellet grill. Once you try the hot version, the cold stuff just doesn’t cut it anymore.

7. Smoked Buffalo Chicken Dip

This smoked buffalo chicken dip was a massive hit at the last party we threw, and it couldn’t be easier to pull off on the pellet grill. The wood-fired smoke cuts right through the tangy buffalo sauce and rich cheeses, giving it that backyard BBQ twist that takes it to another level. It’s the kind of dip that has everyone crowding around the skillet after the first bite.

8. Smoked Spinach Artichoke Dip

I took the classic spinach artichoke dip and gave it the full Traeger treatment – and anytime you add loads of melty, bubbly cheese and a hint of smoke, you’re in for a treat. Cooked in a cast iron skillet, the creamy base soaks up just the right amount of wood-fired flavor. Pair it with grilled pita or tortilla chips and this one’s a guaranteed crowd-pleaser.

9. Loaded Cowboy Queso

Loaded Cowboy Queso

This Loaded Cowboy Queso might just be the most over-the-top, crowd-destroying dip we’ve ever pulled off the smoker – and that’s saying something. Ground beef, black beans, corn, melty cheese, and the perfect blend of spices all come together into one big, bold, smoky dip that hits every single note you want on game day. We brought a batch to a tailgate and let’s just say there were no leftovers to bring home.

10. Texas Trash Dip With Ground Beef

Texas Trash Dip is already a crowd favorite on its own, but we couldn’t leave well enough alone – so we threw it on the pellet grill and loaded it up with ground beef to take it completely over the top. Refried beans, cream cheese, and sour cream form the base, and the smoker does the rest, adding that wood-fired depth that makes every single bite hit harder. If you’re looking for a hearty, meaty dip that’ll have people hovering around the snack table all afternoon, this one’s a no-brainer.

11. Smoked Black Bean Chorizo Dip

Smoked Black Bean Chorizo Dip

Smoked Black Bean Chorizo Dip has quickly become one of our go-to game day recipes – and once you taste it, you’ll understand why. Mexican chorizo is already smoky and spicy on its own, but letting it ride low and slow on the pellet grill with black beans and melty cheese takes the whole thing to another level of Tex-Mex goodness. It’s hearty enough to be a meal and bold enough to be the first thing that disappears off the table.

That’s 11 smoked dips that are guaranteed to steal the show at your next cookout, tailgate, or game day spread. Whether you’re firing up the smoker for a quick queso or letting a pickle dip soak up that low-and-slow smoke flavor, these recipes prove that dips deserve just as much attention as your brisket and ribs.
