This homemade turkey rub recipe takes just 2 minutes to throw together, uses ingredients you probably already have in your pantry, and gives your smoked turkey that gorgeous golden-brown skin and bold flavor every single time.

I’ve smoked a lot of turkeys over the years – Cajun style smoked turkey, apple cider brined turkey, you name it – and no matter what marinade or brine I’m using, a good dry rub is what really seals the deal on that outside layer of flavor and color. This is my go-to homemade turkey rub when I want something simple that doesn’t require a special trip to the store.
It’s a classic blend of smoked paprika, salt, pepper, and a handful of dried herbs and aromatics – nothing fancy, just the stuff that makes a turkey actually taste like something. Whether you’re smoking a whole bird for Thanksgiving or just want a good all-purpose turkey seasoning in your pantry, this one’s a keeper.

Turkey Rub Ingredients

- Paprika – This is mostly here for color, but if you can find smoked paprika, you’ll get the added benefit of extra smoke flavor.
- Coarse salt – I like a coarse or kosher salt here so it doesn’t clump and spreads evenly over the skin. Salt is also doing double duty by helping season the meat itself, not just the surface.
- Black pepper – Adds a little bite. I prefer coarse black pepper, like the kind that we use in our Texas-style rub, but regular works fine also.
- Dried thyme and dried rosemary – These two herbs are classic turkey flavors for a reason. They bring an earthy, savory note that pairs perfectly with poultry.
- Garlic powder and onion powder – These build the savory backbone of the rub. I always keep both stocked for rubs like this one.
- Brown sugar – Optional, but we like to add a bit of brown sugar to our turkey rub to balance out the savory spices.
Tips for Seasoning Your Turkey
Prep your turkey. Make sure your turkey is fully thawed and patted dry with paper towels. A dry surface helps the rub stick and gives you better colored, crispier skin once it hits the smoker.
Season generously. Cover the entire turkey with the rub – top, bottom, and in every nook and cranny. If you can get some of the rub up under the skin (I always try to loosen the skin over the breast first), that’s even better for flavor.
Let it rest. Give the seasoned turkey about 30 minutes to sit before you move on to smoking. This gives the salt and seasonings a little time to start working into the meat. You can smoke it right away if you’re short on time, but that extra 30 minutes helps the flavor sink in more.
